Wine Obtained from 100% Cabernet Franc grapes, a vine of Bordeaux origins introduced into Collio at the end of the 1800s. It has very vigorous vegetation and immediately demonstrated great resistence to rain and to the intemperate weather of spring and autumn.
Vineyard source This wine is produced from grapes grown in the vineyards of Zavognza and Bukova at an altitude of 150 to 180 meters (500 to 600 feet) above sea level.
Training system Arched cane with production of 70-80 quintals per hectare.
Vinfication The grapes are harvested later than usual and are then macerated for about twenty days until the sugars are eliminated. Pressing is done manually to extract as best as possible, all the substances that the grapes have carefully retained. The wine thus obtained stays in this fashion until the end of bottling, that typically occurs in the summer or autumn the year following the harvest.
Color Natural ruby red with a definite violet rim that shifts to garnet/brown with age.
Nose Typically intense herbal aromas that are very pleasing and reminiscent of the variety.
Palate Herbaceous in nature, displaying richness and harmony. Full and generous, distinct and austere.
Serving temperature Serve at 16 to 20 degrees C (50 to 65 degrees F), so that the wine can present all its characteristics.
Recommended foods Antipasti (salumi or cold cuts), roasted white or red meat, chicken, game and aged cheeses.
